Ingredients:
½ cube of butter (can substitute olive oil)
1 cup pine nuts
1 med. sweet onion (chopped)
2-3 tsp minced garlic (good for what ails ya)
2 lightly packed cups fresh basil leaves
½ cup parmesan cheese
sea salt (Real Salt)
1 16 oz package of dry pasta
Saute together:
½ cube of butter (can substitute olive oil)
1 cup pine nuts
1 med. sweet onion (chopped)
2-3 tsp minced garlic (good for what ails ya)
sauté till onions are “clear-ish”
Place sautéed ingredients in a blender, or food processor, with 2 cups (packed-ish) of fresh basil and the parmesan cheese. Blend the heck out of it. You want the sauce more on the creamy side than chunky. Can add a little olive oil if needed to help with mixing. Combine cooked pasta (one 16 oz. bag of dry pasta, cooked to perfection), pesto, chopped tomatoes, black olives, grilled chicken…whatever you like in your pasta. Stir thoroughly, until everything is evenly coated in pesto. Season to taste with freshly ground black pepper and sea salt (Real Salt). “Yummers!”
Serve. Enjoy. Savor it...
